ABSTRACT. Having in view that food engineering belongs to technical sciences the present analysis is focused on the food discourse subtypes, more precisely on its scientific research one. The aim is to illustrate its structural-textual pattern and to specify the scientific and wording standards it has to comply with. The scientific research subtype of food discourse does not allow for authorial individualism in the sense of deviations from the specificity of stylistic norm, especially in the case of written communication. Its forms (academic courses, papers, scientific and technical bulletins, accounts, etc.) stand for the maximum degree of abstraction and synthesis of information transmitted and for the minimum degree of stylistic individualism.
